Matcha Bacon Sugar Cookies

INGREDIENTS:

COOKIES:

  • 1 large egg
  • 2 1/4 cups of all-purpose flour
  • 3/4 cup of softened unsalted butter
  • 3/4 cup of granulated sugar
  • 2 teaspoons of vanilla
  • 1/2 teaspoon of baking powder

COOKIE TOPPINGS:

  • 5 slices of chopped cooked bacon
  • 1 cup of powdered sugar
  • 1 tablespoon of milk
  • 1 tablespoon of matcha green tea powder
  • 2 teaspoons of agave nectar or light corn syrup
  • ½ teaspoon of vanilla

INSTRUCTIONS:

  1. Combine flour and baking powder. Whip butter in a bowl or mixer until creamy for 1 minute.
  2. Scrape the bowl as needed and beat the egg and vanilla until incorporated.
  3. Add the half of the flour mixture while the mixer is on low speed, and the mixture should be stirred until it is just mixed. The remaining flour should be added and mixed in until a uniform consistency is reached.
  4. Cut the dough in halves and roll each out to a thickness of 1/4″ on a sheet of parchment paper. Roll out the dough and chill it in the fridge for at least an hour and up to a day.
  5. Cool the dough, then prepare the oven to 350 degrees F. Put some parchment paper on a few baking sheets. Cut shapes out of the dough, then continue re-rolling/cutting until all the dough has been used up.
  6. Turn the baking sheets over after 4 minutes of baking time. You want the cookies to be a pale tint. Be careful not to overbake; otherwise, they will be too crunchy. Cool fully.
  7. Once the cookies have cooled, you may make the icing by combining powdered sugar and milk.
  8. Add the Matcha powder, agave (or syrup), and vanilla, and mix well. Add bacon crumbles to cookies after the frosting has been carefully applied. Give the frosting some time to harden.
