Ingredients

  • 4 8-inch French baguette, sliced lengthwise
  • 2 lbs. of pork, cut into 1/4-inch thick slices, 8-inch length by 2 1/2-inch width
  • pickled carrots and daikon, store-bought
  • 3 tablespoons mayonnaise
  • 1 bunch cilantro leaves

Lemongrass Pork Marinade:

  • 1/2 cup minced lemongrass
  • 5 shallots, peeled and minced
  • 1/2 cup sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons sweet soy sauce
  • 3 tablespoons fish sauce
  • 1 1/2 tablespoons ground black pepper
  • 3 cloves garlic, peeled and minced
  • 2 tablespoons cooking oil

Instructions

  1. Use a mallet to pound the pork slices. Combine the marinade ingredients together in a bowl before using.
  2. Two hours, or better yet, overnight, marinate the pork in the Marinade. Before grilling, drain off any extra marinade and discard it.
  3. Place the pork on your grill and cook it for a few minutes. Remove it off the grill when both sides are adequately browned or cooked through the pork. A broiler oven can be used to cook pork for 5-7 minutes on each side until it’s cooked through and blackened to your liking.
  4. Cooking time is over, so remove the pork from the grill and let it rest. Garnish the sandwich with a few slices of grilled pork and mayonnaise spread on toast. Pickled carrots and daikon, as well as cilantro leaves, should be atop the pork. Serve right away, with the baguette halves cut in half.
