Ham Pot Pie

  • 1 large ham bone
  • 1 cup diced ham
  • 1 cup half-and-half
  • Salt and pepper

Place ham bone in a slow cooker. Cover with water and cook on low for 12-18 hours. Strain broth. Transfer broth to soup pot and add ham. Simmer on low while you make dough.

  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 cup water

Mix flour, salt and water. Roll out on a floured surface and cut into 2-inch squares. Drop one by one into soup pot. Simmer for 10 minutes. Add half-and-half. Season to taste with salt and pepper.

Hash Browns

  • 4 medium potatoes
  • 2 eggs
  • 3/4 teaspoon salt

Shred potatoes. Mix in eggs and salt. Fry like you would an egg (approximately 1/2 inch thick).

Chicken Dumpling Soup

  • 4 chicken thighs, cut 1-inch thick
  • 2 teaspoons butter
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon pepper
  • 1 cup chopped carrots
  • 1 medium onion, sliced
  • 5 cups chicken broth
  • 1 cup cream
  • 1/2 cup flour
  • 1/2 teaspoon each salt and pepper

In a pot, melt butter. Add chicken and salt. Cook until browned. Add vegetables, pepper and broth. Whisk together cream and flour until smooth. Add to soup mixture once vegetables are tender. Add salt and pepper. Simmer.

Dumplings:

  • 4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1-1/2 teaspoons salt
  • 2 cups flour
  • 1/4 teaspoon pepper
  • 6 teaspoons butter, grated
  • 1-1/4 cups buttermilk

Make dumplings. Drop by tablespoon into soup mixture.

Zuppa Toscana

  • 6 slices bacon, chopped
  • 1 pound Italian sausage
  • 4 garlic cloves
  • 1/2 onion, diced
  • 4 cups broth
  • 4 potatoes, chopped and cooked
  • 3 cups kale, stems removed and leaves chopped
  • 1/2 cup cream
  • Salt and pepper to taste

Combine in a large pot in the order listed, frying bacon and sausage then adding remaining ingredients. Let simmer 20 minutes.

Meatball Soup

  • 4 cups potatoes
  • 1 large onion
  • 1-2 cubed carrots
  • 4 cups water or broth
  • 1-2 teaspoons salt
  • 1 cup milk
  • 1 teaspoon vinegar

In a large saucepan, combine potatoes, onions, carrots, water and salt.

  • 1 pound beef
  • 1 cup breadcrumbs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

In a small bowl, mix beef, breadcrumbs, milk, salt and pepper. Drop by tablespoon into soup mixture. Simmer on low, covered, for 35 minutes. Remove from heat and add milk and vinegar.

Sour Cream Chicken

  • 1 cup sour cream
  • 2 tablespoons lemon juice
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon paprika
  • 1-1/2 teaspoons salt
  • 1-1/4 teaspoons pepper
  • 1 teaspoon red wine vinegar
  • 1 cup breadcrumbs
  • 1/4 cup butter, melted
  • 6 chicken breasts

Mix first 7 ingredients. Marinate chicken in mixture overnight. Roll chicken in breadcrumbs. Put in pan. Pour 1/4 of butter on top. Bake at 325 F for 40 minutes. Spoon remaining butter over chicken and bake an additional 15 minutes.

Chicken Casserole

  • 3-4 cups cooked, diced chicken
  • 10 slices bread, cubed
  • Celery salt, to taste
  • Parsley

Place chicken in a greased 9×13-inch dish. Cover with cubed bread. Season with celery salt and parsley.

  • 1/2 cup butter
  • 2/3 cup flour
  • 2 teaspoons salt
  • Pepper
  • 3 cups milk
  • 2 cups chicken broth

Melt butter in a saucepan. Stir in flour, salt and pepper. Stir until thickened. Add milk and broth. Pour over bread. Bake at 350 F for 35-38 minutes.

Parmesan Chicken Strips

  • 1-1/2 pounds chicken breast
  • 1 cup breadcrumbs
  • 1/2 cup Parmesan cheese
  • 1/2 to 1 teaspoon basil
  • 1/2 to 1 teaspoon thyme
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1/2 teaspoon butter
  • 3/4 cup butter, melted

Mix all except chicken and melted butter. Slice chicken in thin strips. Dip in melted butter. Dip in crumb mixture. Place in shallow baking pan and bake at 400 F for 15-20 minutes.

Almost Pizza

  • 7 cups shredded potatoes
  • 2 cups white sauce (recipe following)
  • 1 pound ground beef or loose sausage, browned and seasoned
  • 1 cup pizza sauce
  • Pizza toppings
  • Shredded cheese

Put shredded potatoes in a 9×13-inch pan. Pour white sauce over potatoes. Top with meat and pizza sauce. Bake at 350 F for 45 minutes. Top with pizza toppings (ham, pepperoni and cheese). Bake 10 minutes longer.

For white sauce:

  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups milk

Melt butter; stir in flour. Add salt, pepper and milk. Bring to a full boil.

Taco Soup

  • 2 pounds hamburger
  • 1 small onion
  • 2 packages taco seasoning
  • 2 quarts tomato juice
  • 3/4 cup sugar
  • 2 cans beans, refried or chili
  • 1 quart corn
  • Taco chips
  • Shredded cheese
  • Sour cream

Fry hamburger and onion together. Add taco seasoning. Add tomato juice, sugar, beans and corn. Simmer 15 to 20 minutes. Serve with corn chips, shredded cheese and sour cream.

This is a family favorite.

Poor Man’s Steak

  • 2 pounds ground beef
  • 1 cup saltine crumbs
  • 1 cup milk
  • 1 onion, diced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Mix together and press into baking dish. Cut into squares and coat both sides with flour. Brown in skillet and place back into the baking dish.

Mix together:

  • 1 can mushroom soup
  • 1 can water

Pour over meat in baking dish. Cover and bake 1 hour at 350 F. Serve with mashed potatoes so you can spoon the soup/gravy mix over them.

Banana Bread

  • 1/2 cup butter
  • 3 ounces cream cheese
  • 1 cup brown sugar
  • 2 medium bananas
  • 1 egg
  • 1/4 cup sour cream

Mix well. Then add:

  • 1-1/2 cups flour
  • 3/4 cup mini chips
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Grease pan. Bake at 325 F for 60-75 minutes until edges pull apart from pan.
