Five-Ingredient No-Waste Potato Skins

Potato skins are usually a surprisingly involved dish, so we went ahead and simplified it. Additionally, most recipes just have you scoop out the flesh and ditch it, we’re not about that here. Let’s make it easier, and less wasteful.

What you’ll need:

  • 5lb russet potatoes (the 5lb bag is the cheapest option)
  • 2 cups shredded cheddar
  • 1 container Greek yogurt
  • vegetable oil spread
  • green onion

What you’ll do:

  • Preheat oven to 425 F
  • Pierce 8 potatoes with a fork and rub with melted vegetable oil spread (one good scoop with a wooden spoon will do, about 0.33 cups)
  • Bake potatoes for 50 minutes, flipping halfway
  • Wait 15 minutes for the potatoes to cool
  • Slice in half lengthwise and scoop out flesh leaving around 1/4-1/2 inch thick shell.
  • Mix scooped potato flesh, greek yogurt, and shredded cheddar in a bowl (season to taste) and optionally add more vegetable oil spread for a more runny texture.
  • Fill potatoes with mixture and broil for 3 to 4 minutes.
  • Top with green onions

What you’ll spend:

  • Lidl – $9.52
  • Safeway – $12.97
  • Giant – $10.66
  • Cheapest across the board – $9.02 (Again mostly from Lidl, but Giant always seems to come in clutch somewhere — this time it’s the veg oil spread)

Notes: You can add some bacon to this if you want, we just didn’t include that because we were dazzled by the idea of actually making this under $10. Adjust the number of potatoes to the number of servings you want, you’re unlikely to need more than five pounds here.

Simple Beef Nachos under

  • 2 cups Shredded cheddar
