Leprechaun Bark Is The Sweetest Way To Guarantee Some Luck This St. Patrick’s Day

February 22, 2024

Is it the luck o’ the , or is this leprechaun bark exactly the sweet treat we all need to celebrate ? Full of colorful Lucky Charms, mint , and white chocolate, it doesn’t get much easier to prepare this festive .

Some quick tips: Look for a green and gold sprinkle mix (they sell them on Amazon) or use whatever sprinkles you have on hand. Don’t skip spraying the baking sheet with cooking spray, as it helps the parchment adhere to the baking sheet, making it easier to spread the melted white chocolate into a thin and even bark.

We’ve got two options for you when it comes to decorating your bark: You can dollop green chocolate over the white chocolate and spread in an even layer to create a green layer on top, or you can drizzle green chocolate over the white chocolate to create more of a swirled effect. Both will be delicious, so decorate however speaks to you.

  • Cooking spray

  • 2

(12-oz.) bags white chocolate chips, divided

  • 4 tsp.

    vegetable oil, divided

  • Green gel food coloring

  • 1 c.

    Lucky Charms cereal

  • 1/2 c.

    green mint M&M’s

  • 3 tbsp.

    green and gold mixed sprinkles

Directions

    1. Step 1Grease a large baking sheet with cooking spray and line with parchment. In a large heatproof bowl set over a large pot of barely simmering water (make sure bowl doesn’t touch water), cook 1 1/2 bags chocolate and 1 teaspoon oil, stirring, until melted and smooth.
    2. Step 2Pour melted chocolate onto prepared baking sheet. Using an offset spatula, spread chocolate to a 1/4″-thick layer.
    3. Step 3Return bowl to pot of simmering water. Cook remaining 1/2 bag chocolate and 3 teaspoons oil, stirring, until melted and smooth. Stir in green food coloring by the drop until desired minty green color is achieved (about 18 drops).
    4. Step 4Dollop green chocolate over white chocolate and spread in an even layer to create a green layer on top (or you can drizzle green chocolate over white chocolate).
    5. Step 5Sprinkle with Lucky Charms, M&M’s, and sprinkles. Gently press toppings with your hands to ensure they’re partially submerged in chocolate. Let sit at room temperature until chocolate is firm and set, about 30 minutes.
    6. Step 6Break into large pieces with your hands and enjoy.
