Then, satisfy their sweet tooth with irresistible no-bake cookies, a simple, but decadent treat that requires zero oven time. Chicken Skewers

Ingredients:

  • 1.5 lbs chicken thighs, boneless and skinless
  • Assorted vegetables (such as bell peppers, onions, mushrooms, cherry tomatoes, zucchini)
  • Wooden skewers
  • Olive oil (for marinating)
  • Salt and pepper (to taste)
  • Optional: your favorite marinade or seasoning blend

Instructions:

  • Slice the chicken thighs into bite-sized pieces and place them in a large bowl.
  • Season the chicken with salt, pepper and your choice of marinade or seasoning blend. Mix well to ensure the chicken is evenly coated.
  • Cover the bowl and refrigerate overnight to allow the chicken to marinate and develop flavor.
  • If using wooden skewers, soak them in water for at least half an hour before grilling to prevent them from burning.
  • Prepare the vegetables by cutting them into pieces roughly the same size as the chicken. You can also buy pre-cut vegetables to make this easier.
  • Assemble the skewers by alternating pieces of chicken and vegetables.
  • Preheat the grill to medium-high heat.
  • Place the skewers on the grill and cook for about 10 to 15 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
  • Pack a digital thermometer and use it to ensure the chicken reaches an internal temperature of 165°F. Take the temperature of the thickest piece to ensure it’s cooked thoroughly.
  • Once cooked, remove the skewers from the grill and serve hot.

No-Bake Cookies

Ingredients:

  • 1/2 cup (1 stick) unsalted butter
  • 1 and 3/4 cups granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 3 cups old-fashioned rolled oats
  • 1 teaspoon vanilla extract
  • 2/3 cup creamy peanut butter

Instructions:

  • In a medium saucepan, melt the butter over medium heat.
  • Stir in the sugar, cocoa powder and milk until well combined.
  • Bring the mixture to a boil, stirring frequently. Once boiling, allow it to boil for one minute without stirring.
  • Remove the saucepan from the heat and stir in the rolled oats until they are fully coated with the chocolate mixture.
  • Add the vanilla extract and peanut butter to the mixture, stirring until everything is well combined.
  • Using an ice cream scoop or spoon, drop spoonfuls of the mixture onto baking sheets lined with parchment paper.
  • Let the cookies sit at room temperature until they harden, or place them in the refrigerator to speed up the process.
  • Once hardened, transfer the cookies to an airtight container for storage.
  • Store the cookies at room temperature in container.
