Collaborating closely with Vitamix, we’re thrilled to introduce a recipe that fuses well-being and indulgence seamlessly: the delectable vegan chocolate and peanut butter silk tart! While maintaining the original name, we’ve refined the recipe to offer an even more luxurious experience, bringing out the best in each ingredient.
Each of us cherishes a certain pie or tart that warms our heart. For me, it’s the indulgent chocolate pudding pie, a dessert I relished in my younger years but scarcely indulge in now. Childhood memories flood back with each bite of its graham cracker crust and cool whip topping, a treat we kids would sneak tastes of at every opportunity.
Unfortunately, the conventional chocolate pudding pie comes laden with calories, making it difficult to justify for those of us with less active lifestyles. But what if you could savor this pie guilt-free?
Silken Tofu in Desserts – A Surprising Twist
Enter silken tofu.
Often overlooked, this humble ingredient can make a world of difference in elevating a simple dessert to an extraordinary one. Particularly in vegan and dairy-free confections, silken tofu takes center stage!
With its subtle flavor and creamy, easy-to-blend texture, silken tofu serves as an ideal alternative to yogurt, dairy, or other high-fat emulsifiers in baked delights.
Upon hearing about a silken tofu chocolate tart, I was instantly drawn to reinventing it in my own style.
Simplify Vegan Desserts with the Power of a Blender
Excitingly, this Chocolate and Peanut Butter Silk Tart is entirely vegan, created with a mere EIGHT ingredients, and primarily put together using our reliable Vitamix Ascent Series blender.
The recipe is simple: First, craft the graham cracker crust using coconut oil in place of butter, then blend all the filling ingredients together in the Vitamix. It skillfully manages both silken tofu and luscious chocolate. Let it set, slice it, and voila – an indulgent treat is ready to be savored.
The silken tofu brings that cherished pudding-like consistency to this vegan chocolate and peanut butter silk tart. And, with a touch of peanut butter and a sprinkle of cinnamon, it’s a nostalgic dessert reinvented!
For those following a gluten-free diet, you can easily substitute regular graham crackers with gluten-free ones for the crust.
EAGER TO GET COOKING? Create this delicious Vegan Chocolate and Peanut Butter Silk Tart!
- 16 graham crackers (or GF graham crackers for a Gluten-Free version)
- ½ cup of coconut oil (liquefied)
- 12 ounces of a standard-sized block of silken tofu
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1/2 cup peanut or almond butter
- 2 cups of melted vegan dark chocolate chips (optional: extra grated chocolate for garnishing)
- ¼ teaspoon cinnamon
- Kick-start by preheating your oven to 350 degrees F. Assemble the graham cracker crust by pulverizing the graham crackers to a fine crumb in a food processor or your Vitamix blender. Stir in the melted coconut oil and process until you achieve a well-mixed consistency.
- Press this graham cracker blend into a tart pan and bake for 8-10 minutes. Once done, remove it from the oven and allow it to cool. This step can be done ahead of time and stored in the refrigerator if required.
- After the crust cools down, it’s time for the filling. In a blender, combine the silken tofu, almond milk, peanut (or almond) butter, vanilla extract, melted chocolate, and cinnamon. Blend until you get a smooth texture, using a spatula as needed to ensure thorough blending.
- Pour the smooth filling into the pre-prepared graham cracker crust and let it chill for 8-24 hours. For an added touch, garnish with grated chocolate, slice, and serve!
- Silken tofu not only offers a velvety texture to your dessert but also infuses it with essential nutrients. It’s a powerhouse of protein, providing all nine essential amino acids, and it’s a good source of iron, calcium, manganese, phosphorous, among other minerals.
For added nutritional benefits, consider topping your tart with fresh fruits or nuts. Berries, particularly, can lend an antioxidant boost and offer a refreshing counterpoint to the rich chocolate and peanut butter flavors.
Indulge in this decadent dessert that doesn’t compromise your health, offering a balanced blend of sweetness and nutrition!
