Turning some of the cooked rice into a paste is a genius trick that gives the soup a creamy congee-like texture. If you have leftover lemongrass and makrut lime leaves, consider packaging them up in sealable containers along with ginger, and you’ll have pre-portioned aromatics for the stock at your fingertips. (Freeze them for up to 1 year.) If there’s any leftover garlic oil, refrigerate it for up to 1 week and use it to make salad dressing or drizzle over a grain bowl.

For a thicker soup, mash 1/2 cup of the beans and stir into the soup right before adding the cream. Frozen sweet potatoes and collard greens keep the prep to a minimum, but if you have a little extra time on your hands, fresh veggies work just as well. Serve with crusty bread for dunking.

Even though this lentil soup is made with just a handful of ingredients, it’s incredibly flavorful. If you have a special bottle of olive oil, drizzle some on top of each bowl before serving. If you can’t find or don’t like chard, kale or collards would be equally delicious. Easy Green Tortellini Soup

The base of this green tortellini soup is prepared in advance and stored in separate containers for an easy grab-and-go lunch. Layer the spinach on top of the pesto to create a barrier that will keep the tortellini from getting soggy. When you’re ready to enjoy it, simply add the broth and heat it in the microwave. This recipe is low in saturated fat, a type of fat folks with certain health conditions, like diabetes, need to be aware of, and has a healthy amount of carbs to support stable blood sugar levels, which translates to stable energy levels.
