Keluskar presents a selection of recipes to experiment with on this National Homemade Soup Day:
1. Broccoli Delight
Ingredients
200 grams of broccoli
1 cup of spinach
Half a bowl of toasted watermelon seeds
1 cup of milk
1 small diced onion
4-5 minced garlic cloves
1 tablespoon of oil
Pepper
Instructions
- Heat oil in a saucepan. Add garlic and onion once the oil is hot.
- Sauté until golden brown.
- Introduce broccoli and spinach, simmer for the next 2 minutes.
- Add the toasted seeds and milk, cook for 5 minutes.
- Utilize a hand blender to achieve a creamy texture.
- Conclude by seasoning with salt and pepper, serve hot.
2. Beetroot and Lentil Soup
Ingredients
2 beetroots, diced
1 small bowl of red lentils
1 small diced onion
2 garlic cloves
2 cups of vegetable broth
¼ teaspoon cumin powder
¼ teaspoon coriander powder
¼ teaspoon turmeric
Fresh coriander leaves
1 tablespoon of oil
Instructions
- Heat oil in a pot, add garlic and onion.

2-3 tomatoes

5-6 cashew nuts

Toasted pumpkin seeds
1 tablespoon of olive oil
Instructions
- Roast all the vegetables and nuts in a pan for 10 minutes.
- Blend the roasted ingredients in a blender until a thick puree is formed.
- In a pot, heat 1 tablespoon of oil, add the puree.
- Season with black pepper and coriander, cook for an additional 2 minutes.
- Serve hot, garnished with pumpkin seeds.
4. The Winter Warmer
Ingredients
1 tablespoon of garlic
1 tablespoon of ginger
¼ cup of carrots
¼ cup of cabbage
¼ cup of beans
2 cups of water
Watermelon seed powder
Salt and pepper to taste
1 tablespoon of oil
Instructions
- In a pan, add oil, garlic, and ginger once the oil is hot.
- Sauté carrots, cabbage, and beans for 5 minutes.
- Pour water and let it simmer for 10 minutes.
- Add watermelon seed powder, salt, and pepper.
- Serve piping hot.
5. Sweet Potato Soup
Ingredients
1 sweet potato
50 grams of beans
50 grams of pumpkin
1 tablespoon of oil
250 ml of chicken stock
Pepper
Instructions
- In a large saucepan, sauté chopped sweet potato, beans, and pumpkin in oil.
- Cook for 5 minutes.
- Add chicken stock, bring to a boil.
