INGREDIENTS:

  • 225g of ground pork
  • 8 cups of Chicken broth
  • 5 cloves of chopped garlic
  • 3 to 10 thinly sliced bird’s eye chilies
  • 1 package of chopped into ¼” pieces Chinese pickled long beans
  • 1 diced small green bell pepper
  • 1 diced small red bell pepper
  • 3 tablespoons of oil
  • 2 teaspoons of cornstarch
  • 2 teaspoons of minced ginger
  • 1 teaspoon of soy sauce
  • 1 teaspoon of Shaoxing wine
  • 1 teaspoon of sugar
  • 1/8 teaspoon of white pepper
  • Choice of noodles to serve

INSTRUCTIONS:

  1. The ground pork must first be marinated. Combine 1 tablespoon of oil, 2 teaspoons of cornstarch, 1 teaspoon each of soy sauce and Shaoxing wine, and 1 teaspoon. Put aside until you get the rest of the stuff you need.
  2. In a cast-iron skillet or wok, heat the remaining 2 tablespoons of oil over a high flame. Stir in the meat and heat until done and just beginning to crisp. One minute after adding the ginger, the oil will be fragrant enough to use.
  3. The next step is to throw in some garlic and sauté it until it starts to turn golden.
  4. Bell peppers, both green and red, should be chopped and cooked until just tender. Cook for a few minutes, occasionally stirring, to warm the long beans thoroughly. Ingredients: chilies, long beans, sugar, white pepper. Add the chilies and ginger to the oil early for maximum flavor infusion.
  5. Put some noodles and soup in a bowl, then top it with some pickled long bean stir-fry. Just season to taste with salt and/or hot sauce.
  6. Serve the delicious Chinese Pickled Long Bean Noodle.
