Ingredients
- 25 g
butter
- 200 g
chestnut mushrooms, chopped
- 1
garlic clove, crushed
- 1 tsp.
dried mixed herbs
- 75 g
baby spinach
- 50 g
chorizo, finely chopped (skinned if from a ring)
- 1 1/2 tbsp.
runny honey
- 1/2 tsp.
dried chilli flakes
- 4
crumpets, toasted
Directions

- Step 1
Melt the butter in a medium frying pan over medium-high heat. Add the mushrooms and fry until golden and any moisture has evaporated from the pan, about 5min. Stir in the garlic, dried herbs, spinach and some seasoning and cook for 3min, until the spinach wilts.
- Step 2Meanwhile, in a separate small frying pan over medium heat, cook the chorizo for 4-5min, or until crisp and the chorizo has released some of its oil. Stir in the honey and chilli flakes and cook for 1min. Remove from heat.
- Step 3To serve, divide the crumpets between 2 plates, top with mushroom mixture and spoon over the fried chorizo and honey sauce.
