Ingredients

  • 3 tbsp.

    packed dark brown sugar

  • 3 tbsp.

    fish sauce

  • 1 tsp.

    coarsely ground black pepper

  • 1/2 tsp.

    red pepper flakes

  • 1 1/2 tbsp.

    canola oil, divided

  • 1 lb.

    boneless, skinless chicken thighs, cut into 1-in. pieces

    large shallot, thinly sliced

  • 1

    large clove garlic, finely chopped

  • 2 tsp.

    grated fresh ginger

  • 1/2 c.

    off-dry, aromatic Riesling

  • 1 lb.

    green beans, halved

  • 1/4 c.

    cilantro leaves

  • Steamed jasmine rice, for serving

Directions

    1. Step 1In medium bowl, whisk together sugar, fish sauce, black pepper, red pepper flakes, and 1/4 cup water.
    2. Step 2Heat 1 Tbsp oil in large skillet on medium-high. Working in two batches, add chicken and cook, stirring occasionally, until browned, 5 to 7 minutes; transfer to plate (chicken will continue to cook later). 
    3. Step 3Add 1/2 Tbsp oil and shallot to skillet and cook, stirring occasionally, 2 minutes. Add garlic and ginger and cook, stirring, until shallot begins to brown, 1 minute more. 
    4. Step 4Add wine and cook, scraping up any brown bits, until wine mostly evaporates, about 2 minutes. Add fish sauce mixture and bring to a boil, then simmer 1 minute. Add green beans, cover, and cook 3 minutes.
    5. Step 5Add chicken with any juices back to skillet, toss to combine, and cook until chicken is cooked through and beans are just tender, 2 minutes. Toss with cilantro and serve with rice if desired.
