RECIPES: Heart-healthy snacks to make at home

GREENVILLE, S.C. (FOX Carolina) – shares says these snacks are delicious and packed full of ingredients that are good for your heart health.

Vanilla Maple Nut Granola

7 ingredients · 35 minutes · 8 servings (serving size approx. ½ cup)

2 cups Quick Oats

1 cup Walnuts (chopped)

1/2 cup Cashews (raw)

1/4 tsp Sea Salt

1 tsp Vanilla Extract

1/4 cup Maple Syrup

1/4 cup Extra Virgin Olive Oil

Preheat the oven to 350ºF (175ºC). Line a baking sheet with parchment paper.

Add oats, walnuts, cashews, and sea salt to a large bowl and mix well.

In a separate bowl, whisk together the vanilla extract, maple syrup, and oil. Pour this mixture over the oat mixture and stir well to coat.

Put the oat mixture onto the baking sheet and spread it out evenly. Bake for 20 minutes, stirring halfway through.

Let the granola cool on the baking sheet for 10 minutes before serving.

Store leftovers in an airtight container in a cool and dry area for up to two weeks. Keep away from heat. Freeze for up to three months.

Optional: Top with cinnamon, flaky salt, and/or your favorite nuts.

Dark Chocolate, Blueberry & Walnut Cups

5 ingredients · 40 minutes · 8 servings (serving size is 1 cup)

1 tbsp Coconut Oil

8 oz Dark Chocolate (coarsely chopped)

1 tbsp Chia Seeds

1/2 cup Blueberries

2 tbsp Walnuts (finely chopped)

Line a muffin tray with liners or use a silicone muffin tray.

In a saucepan over low heat, melt the coconut oil and chocolate, continuously stirring. Remove from the heat and stir in the chia seeds.

Divide the chocolate mixture between the muffin cups. Top each with equal amounts of blueberries and walnuts, gently pressing them into the chocolate.

Chill in the fridge for at least 30 minutes.

Refrigerate in an airtight container for up to three days. Freeze for up to three months.

Optional: Top with cinnamon, flaky salt, and/or your favorite nuts.
