Ingredients

  • 150 g

    hummus

  • 400 g

    tin chickpeas, drained and rinsed

  • 75 g

    roasted red peppers from a jar, drained and roughly chopped

  • 250 g

    halloumi, drained and cut into rough1.5cm pieces

  • 8

    chicken thigh fillets 

  • 1 tbsp.

    olive oil

  • 1 tbsp.

    sweet smoked paprika

  • Small handful parsley, roughly chopped 

  • Flatbreads, optional, to serve 

Directions

    1. Step 1

      Preheat oven to 200°C (180°C fan) mark 6. In a large roasting tin or ovenproof serving dish mix the hummus, chickpeas, roasted red peppers and plenty of seasoning. Scatter over the halloumi. 

    2. Step 2In a bowl mix the chicken thigh fillets, oil, paprika and plenty of seasoning. Arrange the chicken on top of the hummus mixture. Cook for 30min, or until the chicken is cooked through. Sprinkle over the parsley and serve with flatbreads, if you like.
