Garlic, butter, fish sauce, and black pepper are just a few of the simple ingredients that go into this dish.

Fish sauce is a staple in Thai and Vietnamese cooking, as anyone who enjoys either of those cuisines will attest.

It’s a must-have in many Asian dishes because it’s made from fresh anchovies and salt.

Fish sauce is so widely used these days that it’s a good idea to keep a bottle in your kitchen. It’s possible that the smell will be overpowering (just stay away from it!). However, the flavors it imparts to food are out of this world.

Regular supermarkets carry fish sauce in the International food section. Even in a small bottle, a small amount can go a long way. Three crabs and Red Boat are my favorite brands, which you can find at Whole Foods and Walmart or online.

If you don’t like fish sauce, you can substitute oyster sauce, which is similar to fish sauce.

I highly recommend using Trader Joe’s Wild Argentinian Red Shrimp in this recipe. Peel and devein the shrimps are large and meaty with a nice firm texture that tastes sweet.

Making this dish only takes 15 minutes. You can serve it as a main dish or as an appetizer with rice or noodles.

I offer the following recipes for a healthful meal that is also quick and easy to prepare on a weeknight:

Ingredients:

  • 3 dashes ground black pepper
  • 1 tablespoon chopped scallion
  • 2 pounds of deveined and shelled shrimp
  • 4 slices lemon wedges
  • 1 teaspoon sugar
  • 4 cloves garlic, minced
  • 3 dashes cayenne pepper, optional
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons fish sauce

Instructions:

  1. Thaw the shrimp in the refrigerator. Use paper towels to dry after rinsing under cold water.
  2. Start by preheating an oven-safe pan on the stove. Then you add the garlic and the melted butter. Only cook garlic for 10 seconds before adding it to the pan with shrimp. Before adding the fish sauce, sugar, black pepper, and cayenne pepper give the shrimp a few good stirs.
  3. Cook the shrimp by stirring it with finely chopped scallions. Serve the shrimp right away with a squeeze of lemon juice on top.

Notes:

  • If you want to make this dish, I recommend using Trader Joe’s Wild Argentinan Red Shrimp. You can also use any shrimp that has been shelled or deveined.
  • Oyster sauce can be substituted for fish sauce. About a heaping tablespoon of oyster sauce plus salt to taste is all that’s needed here.
