Big Game Recipes with Channel 3

(WFSB) – Channel 3 is getting ready for the big football game this Sunday, February 11th on CBS. Here are a few of our favorite recipes to make for a party!

Mini Reuben Bites with Erin Connolly

Erin Connolly Mini Reuben Bites(wfsb)

INGREDIENTS:

  • ·1/2lb corned beef (shaved at the deli)
  • 1/2lb Swiss cheese (sliced very thin at the deli)
  • 16oz sauerkraut
  • 1/2 cup Dijon mustard
  • 1/2 cup mayo
  • 1 loaf of rye bread seedless or party rye if you can find it!

DIRECTIONS:

  1. Chop the corned beef and Swiss cheese into bite-sized pieces.
  2. Drain the sauerkraut.
  3. Mix the first five ingredients in a bowl.
  4. Cut each slice of rye bread into six slices.
  5. Place rye bread slices on a baking sheet and broil at 500 degrees until toasted.
  6. Flip the rye bread slices and scoop the Reuben mixture on top of each slice.
  7. Broil at 500 degrees until melted.
  8. ENJOY!!!

INGREDIENTS

  • 1lb cooked crumbled sausage meat, casings removed (2 cups cooked)
  • 1 1⁄2cups sharp cheddar cheese, grated
  • 1 1⁄2cups Monterey jack cheese
  • 1cup hidden valley original ranch salad dressing, prepared from mix
  • 1(2 1/4 ounce) can sliced black olives
  • 1⁄2cup chopped sweet red pepper
  • 1(60 count) package wonton wrappers
  • vegetable oil

DIRECTIONS

  1. Heat oven to 350 degrees F.
  2. Combine drained cooked sausage meat with the cheeses, salad dressing, olives and red pepper
  3. Lightly oil mini muffin tins and press a wrap in each tine so there are 4 wings sticking out
  4. Brush with oil bake 5 minutes until golden, remove wraps from pan, place on a baking sheet
  5. Fill wraps with the sausage, cheese mixture
  6. Bake for 5 minutes or until the cheese is bubbly& brown.
Peanut Butter Football Dip with Melissa Cole

Melissa Cole's Peanut Butter Dip

INGREDIENTS:

  • ¼ cup butter , softened
  • 4 ounces cream cheese , softened
  • 1 cup peanut butter your choice; crunchy or smooth
  • ½ teaspoon vanilla extract
  • 1 ½ cups powdered sugar (up to 2 cups if needed)
  • ½ cup mini chocolate chips
  • Chocolate sprinkles or chocolate chips for the outside of the football
  • White chocolate or frosting for the football laces

DIRECTIONS:

  1. Cream butter, cream cheese, and peanut butter until mixed. Mix in vanilla.
  2. Add powdered sugar, ½ cup at a time, and mix until combined. Mix in chocolate chips.
  3. Turn out mixture on a large sheet of waxed paper. Use your hands to form into a football shape.
  4. Place the waxed paper onto your serving plate. Cover in sprinkles or chocolate chips, pressing them into the surface a little so they stick. Pipe on the laces using melted white chocolate or some leftover frosting and chill until ready to serve.
  5. Serv with pretzels, crackers, cookies, etc.

INGREDIENTS:

  • 4 ripe avocados, halved
  • 2 cloves garlic, crushed
  • 2 Tbsp freshly squeezed lime juice
  • Tabasco or hot sauce to taste
  • Sea-salt flakes and freshly ground black pepper, to season
  • Cilantro finely chopped
  • Baked corn tortillas or corn chips, to serve

DIRECTIONS:

  1. Scoop avocado into a bowl. Mash until chunky.
  2. Finely dice cilantro and add to avocado with, diced garlic, hot sauce and lime juice. Stir to combine.
  3. Season with salt and pepper, and serve with baked tortillas or corn chips.
Spicy Chicken Dip with Joe Zone

Joe Zone’s Spicy Chicken Dip(wfsb)

INGREDIENTS:

  • Shredded chicken – store bought or rotisserie
  • About 4 oz cream cheese
  • Blue cheese dressing
  • Hot sauce of choice, or buffalo sauce
  • Four-cheese Mexican blend cheese

DIRECTIONS:

  1. Place shredded chicken to cover the oven-safe dish
  2. Slice cream cheese into pieces and place on top of chicken, distributing evenly
  3. Add blue cheese dressing and hot sauce (to taste)
  4. Top with shredded cheese
  5. Bake at 350° until cheese layer melts
  6. Serve with chips, vegetables, etc.
