Preheat oven to 200°C (180°C fan) mark 6. In a medium roasting tin toss 1tbsp oil, the potatoes and plenty of seasoning. Lay the cod fillets on top and spread over the pesto.Â
- Step 2In a small bowl, mix the panko breadcrumbs with the remaining 1/2tbsp oil and plenty of seasoning. Sprinkle over the fish. Cook for 18-20min, or until the crumbs are golden and the fish is cooked through.
- Step 3Meanwhile, heat the peas and butter in medium pan over medium heat, stirring until piping hot. Stir in the lemon juice and plenty of seasoning. Remove from the heat and roughly mash, using a potato masher or fork.Â
- Step 4Serve the fish and potatoes with the crushed peas.Â
