  • Mini Cucumbers: 132g

  • Grape Tomatoes: 113g
  • Garlic: 6g
  • Dill: 7g
  • Paprika-Cumin-Garlic Blend: 1 tbsp (Contains Sulphites)
  • Pepitas: 28g
  • Vegetable Broth Concentrate: 1 unit
  • Oil: 3 tbsp
  • Salt and Pepper

Instructions

  1. Begin by heating your oven to 400°F for the cauliflower. Once hot, blend 3/4 cup water, broth concentrate, and 1/2 tsp salt in a pot and bring to a boil. Cut cauliflower into small pieces, mix with oil, salt, and pepper, and roast until golden (28-30 min).
  2. Add bulgur to the boiling water, then cover, remove from heat, and let it soak until tender (15-16 min).
  3. Grate cucumber into a bowl, season with salt, and set aside. Cut extra cucumber, halve tomatoes, and chop dill. Mix yogurt, grated cucumber, lemon juice, dill, and garlic for the tzatziki, seasoning as needed.
