Ingredients

  • 1 tbsp.

    vegetable oil 

  • 1

    large onion, finely chopped

  • 400 g

    beef mince, 5% fat

  • 45 g

    sachet cottage or shepherd’s pie seasoning mix 

  • 250 g

    mix frozen carrots and peas

  • 16

    mini potato waffles, see GH TIP

Directions

    1. Step 1Preheat oven to 200°C (180°C fan) mark 6. Heat the oil in a large, deep frying pan over medium heat and fry the onion and beef for 10min, stirring frequently to break up any large beef lumps, or until the onion has softened and the beef is browned.
    2. Step 2Add the sachet seasoning and 400ml water. Bring to the boil and simmer for 5min. Stir in the frozen carrots and peas and cook to defrost. Tip into an ovenproof serving dish. Top with the waffles, overlapping them slightly. 
    3. Step 3Cook in the oven for 30-35min, or until the waffles are golden. Serve with seasonal greens, if you like. 

GH TIP

If you can’t find mini waffles, then use fewer regular-size waffles instead.
