Asian-Inspired Turkey and Tofu Lettuce Wraps with a Twist of Avocado

July 27, 2023

On my journey through China, I savored an unforgettable dish: stir-fried veggies and ground pork ensconced within delicate steamed buns. The experience of that juicy filling against tender bread was unparalleled. Evoking those memories, this recipe offers an Asian turkey and tofu lettuce wraps with Avocado variation, transitioning from buns to fresh lettuce leaves.

The magic intensifies with the infusion of creamy avocado. Truly, avocado has this unique power to elevate the texture and taste of a dish. When selecting lettuce, choose the robust types like iceberg or romaine, ensuring they can cradle the filling without tearing apart.

The beauty of this turkey and tofu lettuce wrap lies in its versatility. Whether you’re a fan of poultry, a vegetarian, or somewhere in between, adapt the ingredients to suit your palate. Feel empowered to experiment; after all, the kitchen is a playground where culinary magic happens with a sprinkle of creativity.

Ingredients:

  • 1 tablespoon oil
  • 3 garlic cloves, minced
  • 1 teaspoon ginger, finely minced
  • ½ pound (225g) ground turkey
  • 1 pound (450g) firm tofu
  • 1 carrot, finely diced
  • 1 cup frozen corn kernels
  • 1 cup edamame beans (substitute with frozen peas if unavailable)
  • 1 small onion, diced
  • ½ teaspoon sesame oil
  • 3 1/2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 2 teaspoons Chinese black vinegar
  • ½ teaspoon crushed red pepper
  • Lettuce leaves (iceberg or romaine)
  • 1 ripe avocado, sliced
  • 2 tablespoons roasted unsalted peanuts, chopped
  • Sesame seeds, for that added crunch

Steps to Flavorful Wraps:

1. In a spacious skillet over a medium-high flame, warm the oil. Sauté the garlic and ginger until their aroma wafts through, then introduce the ground turkey, browning it thoroughly.

2. Transfer the turkey to a bowl. To the same pan, add another dash of oil and crumble in the tofu. Amplify the heat and stir occasionally, letting the tofu brown lightly, ensuring all moisture disappears.

3. Time to reintroduce the turkey and welcome the carrot, corn, edamame, and onion. Stir and sauté until the vegetables showcase their tenderness.

4. Now, pour in the sesame oil, the duo of soy sauces, and vinegar. Let it simmer until the mix absorbs the sauces, revealing a deep, enticing hue. Season with red pepper and stir.

5. Plate up your lettuce leaves and generously ladle in the turkey-tofu mix. Crown each with avocado slices, a shower of peanuts, and a handful of sesame seeds. Embrace the wrap, savoring it like a flavor-packed taco. Dive into this journey of textures and tastes!
