I love potatoes done up pretty much every way and these twice baked potatoes will make you look like you took some extra time to make something fancy.

Twice baked potatoes will dress up any meal and are perfect for parties.  Plus with some easy swaps you can make them a bit more healthy without anyone even knowing. Super bowl is this weekend and this is a must have recipe.

Twice baked potatoes are the potato version of deviled eggs. You bake some potatoes, let them cool, cut them in half lengthwise and scoop out the insides. I use russet potatoes because they are sturdy and hold up nicely.

Twice Baked Potato Recipe

Ingredients:
5 baked potatoes
2 tablespoons of real butter
2 tablespoons of olive oil
1 cup of sour cream (or Greek yogurt)
1/2 cup of cream (or milk)
4-6 strips of bacon cooked and chopped (or Turkey bacon)
1 cup of any cheese. I use Colby-jack and sharp cheddar
Real* Salt and pepper to taste
Top with scallions or green onion

Instructions:
Scrub, wrap in aluminum foil and bake potatoes on 375 degrees for 1 hour, Leave in oven until cool. ( This allows the potato to retain a lot of it’s moisture.)

While potatoes are cooling you can mix the rest of the ingredients together in a bowl, reserving some cheese and green onions to garnish with.

When potatoes are cool enough to handle, cut them lengthwise and scoop out the middle of the skins leaving enough on the side to keep the shape of the potato.
Put the scooped out potato in with the rest of the ingredients and mix well.

Then re-fill each potato skin with the delicious mix and top with cheese and onions.
You can always use more bacon on top as well. I also like to mix it up and top with a little buffalo sauce or jalapenos. You can top with just about anything you like.
Put back into a 350 degree oven for about 15 mins or until the cheese is brown and bubbly. Enjoy!

But there is one MUST HAVE dip that we don’t go a Super Bowl without. Some Sort of Buffalo Chicken Dip must be at our party. This particular recipe is a 10/10. Most of these ingredients are in many recipes, but the flavor combos going on in here will make your taste buds really, REALLY happy.

Buffalo Chicken Crack Dip
Serving size?
 Who the heck knows. I have to triple this recipe for our family gathering and we have 5 different dips!

Ingredients:
2 chicken breasts cooked and shredded
1 8oz block of cream cheese
1 8oz bag of shredded cheddar cheese
1 8oz package of shredded Monterey Jack cheese
4oz of sour cream
1/2 stick of butter
1/2 package of ranch dressing mix
1 4oz can of green chilies, drained
3 cloves of minced garlic
1/3 cup of Franks Red Hot (less for mild or more for spicy)
1/4 cup of Chives on top

Instructions:
Reserve chives and a portion of the shredded cheeses to top off the dish. Add all other ingredients to a pan on low/med heat on your cooktop and mix well.
After the butter is melted, the garlic is fragrant and all ingredients are thoroughly mixed, transfer to an oven safe dish. If you are using a cast iron skillet, all the better and you don’t need to transfer anything.
Top with the reserved shredded cheese and put in a 350 degree oven and cook for 20 mins.

When cheese is bubbly and browning on the sides, add the chives and turn the oven to low broil and leave the dish cooking for another 5-10 mins.
When there is a nice browned layer of cheese on the top of the pan, pull it out of the oven and leave to cool for 10-15 mins before serving, or you will have molten lava in your mouth. ( I seem to test this EVERY TIME.)
Serve with tortilla chips, carrot sticks olives, celery sticks and bread.
