In the Spotlight: Cherry Rankin shares her recipe for Summer Fruit Dip

TALLAHASSEE, Fla. (WCTV) – Cherry Rankin joined WCTV to share her recipe for Summer Fruit Dip and homemade chips!

Ingredients

  • 1 lb. fresh strawberries
  • 1 pint fresh blueberries
  • 1pint fresh raspberries
  • 1 cup Diced mango (fresh or canned)
  • 2 apples
  • ½ cup lemon juice
  • 2 Tablespoons honey
  • ¼ tsp vanilla

Chips:

  • 1 crescent rolls
  • ½ cup butter
  • ½ cup granulated sugar
  • 2 tsp cinnamon

Instructions

To make the fruit dip:

  • Dice the strawberries and place in a medium size bowl. Cut the blueberries and raspberries into halves or quarters, depending on their size, and add them to the bowl. Add diced mango Peel and finely dice the apples and add them to the bowl.
  • In a small bowl, stir to combine the lemon juice, honey, and vanilla. Pour over the fruit and stir gently to coat.
  • Cover and chill for about 15 minutes in the refrigerator before serving.

To make the chips:

  • Preheat the oven to 400 F and line a baking sheet with parchment paper.
  • Using a sharp knife or pizza cutter, cut the crescent rolls into bite size squares lay out in a single layer on the baking sheet.
  • Brush with butter and sprinkle with cinnamon sugar. Flip over and repeat on the other side.
  • Bake for 7-8 minutes or until crisp.
